Callipyge Chardonnay

Renaissance transpired through spontaneous fermentation at conception and months of mellowing in oak barrels. This is a wine of character.
Notes of vanilla, cinnamon and clove. Also Fynbos, stone fruit, pineapple. Balanced palate for such a young wine, textured, complex, layered, elegant, creamy yet delicate. Stone fruit, melon, citrus finish. Aged 8 months in French oak barrels and perfect in colour.

The grapes were hand harvested, chilled and gently whole bunched pressed. No enzymes or yeasts were added to allow spontaneous fermentation to happen. 70% was allowed to go through malolactic fermentation and the wine was matured in French oak barrels for 9 months, using 25% new.
